Does it seem like it's hard to follow a healthy diet over the holidays? Treats CAN actually have nutritional value while satisfying your sweet tooth. I created this sweet treat with natural sugars balanced with protein, fat, and fiber.
Ingredients
Dough:
½ cup organic sunflower protein
¼ cup raw pecans, roasted
¼ cup organic black chia seeds
2 tbsp organic cacao powder
8 pitted deglet noor dates [about ¼ cup chopped dates]
3 tbsp organic almond milk
⅛ tsp sea salt
2 tsp peppermint extract
1 tbsp organic virgin coconut oil
¼ cup organic cacao nibs
Glaze:
2 squares organic unsweetened baking chocolate
½ tbsp organic maple syrup
1 tbsp organic cacao powder
2 tbsp organic almond milk
Instructions
Combine the first 10 ingredients in your food processor and pulse to form a dough, adding the nibs last.
Line an 8x6 inch pan with parchment paper. I use of my 3 cup rectangular Pyrex glass containers.
Press the dough into the pan then place in your freezer for 20-30 minutes.
Combine the glaze ingredients in a double boiler over low heat. Once all the chocolate is melted, immediately spread over the cooled dough.
Refrigerate for 20-30 minutes before cutting into 24 squares.
Store in the refrigerator.
