Cacao Mint Protein Bites [GF/DF/V]




Does it seem like it's hard to follow a healthy diet over the holidays? Treats CAN actually have nutritional value while satisfying your sweet tooth. I created this sweet treat with natural sugars balanced with protein, fat, and fiber.


Ingredients


Dough:

  • ½ cup organic sunflower protein

  • ¼ cup raw pecans, roasted

  • ¼ cup organic black chia seeds

  • 2 tbsp organic cacao powder

  • 8 pitted deglet noor dates [about ¼ cup chopped dates]

  • 3 tbsp organic almond milk

  • ⅛ tsp sea salt

  • 2 tsp peppermint extract

  • 1 tbsp organic virgin coconut oil

  • ¼ cup organic cacao nibs

Glaze:

  • 2 squares organic unsweetened baking chocolate

  • ½ tbsp organic maple syrup

  • 1 tbsp organic cacao powder

  • 2 tbsp organic almond milk


Instructions

  1. Combine the first 10 ingredients in your food processor and pulse to form a dough, adding the nibs last.

  2. Line an 8x6 inch pan with parchment paper. I use of my 3 cup rectangular Pyrex glass containers.

  3. Press the dough into the pan then place in your freezer for 20-30 minutes.

  4. Combine the glaze ingredients in a double boiler over low heat. Once all the chocolate is melted, immediately spread over the cooled dough.

  5. Refrigerate for 20-30 minutes before cutting into 24 squares.

  6. Store in the refrigerator.
