Matcha is high in antioxidants such as EGCG, a catechin compound. Consumed in moderation, matcha has many health benefits. Just beware the high caffeine content.
Ingredients:
1 cup unsweetened organic coconut almond milk
1 tbsp organic coconut cream [or the coconut solids from the top of a can of coconut milk]
½ tsp organic matcha powder
2 drops organic liquid stevia, optional
Instructions:
Warm the coconut almond milk and the coconut cream in a small saucepan or microwave for 1 minute.
Use a French whisk [one of my favorite kitchen tools!] to blend.
Add the matcha powder and whisk until well combined and frothy. I recommend tasting it at this point to see if you desire the stevia. [I typically don’t add sweetener.] If stevia is added, whisk again.

Makes 1 serving of a delightful pick me up treat.
Note: I recommend having this no later than noon due to the caffeine content of matcha and the half life of caffeine.
