Ingredients
1 bunch organic lancinato kale, ribs removed and chiffonade
5-6 small organic carrots, finely shredded [about 1.5 cups]
1 bunch organic green onions, finely sliced
1 small bunch organic red radishes, finely sliced
1 small bunch organic cilantro, chopped
20-25 mint leaves, chiffonade
1/2 cup raw walnuts, freshly roasted
3 cups roast organic turkey or chicken, chopped
Instructions
Combine all ingredients in a large salad bowl.
Pour the dressing over the salad and toss to finely coat.
Refrigerate for 30-60 minutes prior to serving to allow the flavors to meld.
Pro Tip: save and eat the radish greens, which are also full of vital nutrients!
