Lemon balm can help calm the nervous system, improve sleep and digestion, and relieve nausea. If that wasn't enough, this delicious and versatile herb is also packed with antioxidant flavonoid compounds and vitamins to boost your immune system!
INGREDIENTS:
3 cups lemon balm leaves, packed
1 cup parsley, packed
4-5 cloves garlic (adj. to taste)
1⁄2 cup roasted walnuts
1 lemon, juiced [about 1/8 cup]
1 tsp sea salt1
freshly ground black pepper to taste
1/2 cup high polyphenol content, organic extra-virgin olive oil (EVOO)
INSTRUCTIONS:
Combine all ingredients except EVOO in the food processor and blend until smooth, scraping the sides of the bowl several times.
While the machine is running, drizzle in the EVOO and blend until emulsified.
Refrigerate in a glass container under a thin layer of EVOO.
NOTE:
If you don't have lemon balm in your herb garden, you may substitute parsley. This will be a different but equally delicious and nutritious pesto.
