This chocolate chia pudding I created is packed with powerful antioxidants and phytonutrients. It's guaranteed to be a hit with adults and kids alike. If you don't tell your friends and family that it's healthy, they'll never know. Healthy food doesn't have to be boring or flavorless!!!
Ingredients:
1/4 cup organic coconut milk
1 cup unsweetened organic almond milk
1 1/4 cups filtered water
2 Tbsp local unprocessed honey
1/8 tsp sea salt
1/2 cup organic cacao powder
1 Tbsp organic blackberry powder
1/2 cup organic black chia seeds
Instructions:
Combine all ingredients, except the chia seeds, in a large metal or glass bowl and whisk until well combined.
Add chia seeds, whisk, then place the bowl in the refrigerator for 6 hours, stirring occasionally.
Once the pudding has set, pour into 6 small glass containers and store in the refrigerator for up to a week. [As if you can wait that long to eat them!]
Top with toasted coconut, fresh berries, cacao nibs, or toasted nuts.
