Chocolate Chia Pudding

This chocolate chia pudding I created is packed with powerful antioxidants and phytonutrients. It's guaranteed to be a hit with adults and kids alike. If you don't tell your friends and family that it's healthy, they'll never know. Healthy food doesn't have to be boring or flavorless!!!

Ingredients:

  • 1/4 cup organic coconut milk

  • 1 cup unsweetened organic almond milk

  • 1 1/4 cups filtered water

  • 2 Tbsp local unprocessed honey

  • 1/8 tsp sea salt

  • 1/2 cup organic cacao powder

  • 1 Tbsp organic blackberry powder

  • 1/2 cup organic black chia seeds

Instructions:

  1. Combine all ingredients, except the chia seeds, in a large metal or glass bowl and whisk until well combined.

  2. Add chia seeds, whisk, then place the bowl in the refrigerator for 6 hours, stirring occasionally.

  3. Once the pudding has set, pour into 6 small glass containers and store in the refrigerator for up to a week. [As if you can wait that long to eat them!]

  4. Top with toasted coconut, fresh berries, cacao nibs, or toasted nuts.
