Peach Mango Salsa



Fresh peaches are healthy sources of vitamins A and C, along with other antioxidant compounds. Sadly, peaches are heavily sprayed with pesticides, which are known to cause harm to your health as well as to the environment, landing them on the EWG's "Dirty Dozen" list. Keep this in mind, and buy your peaches in season from organic growers.

Ingredients

  • 2 organic peaches

  • 1 organic mango

  • 1/4 organic red onion

  • 1 organic jalapeno, seeds removed

  • 1/4 cup, packed, chopped organic cilantro

  • 1/4 tsp sea salt

  • 1/4 tsp cumin


Instructions

  1. Remove the pits from the peaches, and chop into small dice.

  2. Peel the mango and remove the seed. Chop into small dice.

  3. Finely dice the onion and jalapeno.

  4. Chop the cilantro.

  5. Place all ingredients in a glass, ceramic, or metal mixing bowl.

  6. Add the salt and cumin, and mix well.

  7. Cover and refrigerate a few hours before use to allow the flavors to meld.


Enjoy this salsa with fish, tacos, or another creative and healthy way.
