Sauteed Snake Bean & Garlic



This one is for the gardeners! So many folks have started gardening this year, and I'm quite excited about this! Others, like me, have been growing veggies for years and try several new varieties of veggies each summer. This summer one of my new additions is the Snake Bean, which is actually in the curcurbit [squash] family but tastes like green beans! I know you probably don't have snake beans on hand, but I share this new recipe to inspire you and your next garden. Meanwhile, substitute fresh green beans in this simple dish.


Ingredients

  • 3 cups diagonally sliced snake bean [or fresh green beans]

  • 3 cloves garlic, crushed, peeled, then sliced

  • 1/4 tsp sea salt

  • 2 tbsp organic EVOO

  • freshly ground black pepper to taste


Instructions

  1. Heat a large saute pan over medium heat.

  2. Add the EVOO and garlic, and saute for 30 seconds before adding the sliced beans.

  3. Turn the heat down to low, add salt and pepper, then cover and cook until the beans are tender.

Serves 2.
