Shiitake Mushroom Sauce




Research shows that shiitake mushrooms have powerful health benefits, from anti-cancer properties to boosting the immune system, improving heart health, and more. This rich sauce is easy to make and pairs well with chicken, pasta, and even tempeh.

Ingredients:

  • ½ lb shiitake mushrooms, thinly sliced

  • ½ medium red onion, thinly sliced

  • 1 tbsp organic pastured ghee

  • 1 tbsp EVOO

  • 1 tsp sea salt

  • 1 tbsp fresh thyme leaves, chopped

  • 2 cup chicken bone broth or vegetable broth

  • 2 tbsp organic kudzu root

  • ½ cup water

  • Freshly ground black pepper, to taste

  • 1 tbsp turmeric paste


Instructions:

  1. Melt the ghee in a large sauce pan or skillet.

  2. Add EVOO.

  3. Sauté onions until they begin to soften.

  4. Season with salt and pepper.

  5. Stir in garlic and thyme.

  6. Add mushrooms and sauté, stirring continuously, until beginning to brown slightly.

  7. Add the broth and turmeric paste, and bring to a simmer.

  8. Turn the heat down to low, cover, and cook for 10 minutes.

  9. Completely dissolve kudzu root in cool water before adding to the sauce, stirring continuously until the sauce thickens and bubbles.

  10. Remove from the heat and serve.
