Sweet Potato Fritters

Sweet potatoes are great sources of gut healthy fiber and antioxidants. In fact, test tube studies found that these antioxidants promoted the growth of healthy gut flora, namely certain certain Bifidobacterium and Lactobacillus species. Another fun fact: Sweet potatoes are in the morning glory family and thus are not nightshades [like white, red, yellow, and purple potatoes]!


Ingredients:

  • 1 large organic sweet potato, finely shredded

  • 1 tsp sea salt

  • 1/2 tsp organic smoked paprika

  • 1 pastured organic egg

  • 1 tbsp high polyphenol organic EVOO [here is another good one to try]

  • 2 tbsp organic virgin coconut oil


Instructions:

  1. Preheat the oven and a baking sheet to 450 degrees F.

  2. In a metal or glass bowl, whisk the egg, sea salt, and paprika.

  3. Add the EVOO.

  4. Use your food processor to finely grate the sweet potato, then mix into the egg mixture.

  5. Melt the coconut oil on the baking sheet and evenly distribute.

  6. Form the potato mixture into 6-8 fritters and place on the oiled baking sheet.

  7. Bake at 450 degrees on the bottom rack for 15 minutes.

  8. Turn the fritters and bake for an additional 5 minutes, or until crispy on both sides.

  9. Serve with my Chipotle Lime Dipping Sauce or Southwestern Thousand Island Dressing.
